i tried changing 'theme: minima' to 'theme: my-theme-folder-name' in /_config.yml, but it gives the error 'the my-theme theme could not be found'. so i must be missing something?

Is there any way to a) include the CDN prefix in the image-url SASS helper and b) not include the ridiculous hash on the end of the generated filenames?
